I love smoked sausage recipes (AKA kielbasa recipes).  It’s one of those ingredients that I keep at all times in the refrigerator. Sometimes, I fry it up to eat as a sandwich or other times, I use it as the protein in a casserole or skillet meal.

In this recipe, I fry up smoked sausage with onions and peppers, and then simmer it in a tomato-based sauce.  I add frozen lima beans to my kielbasa stew but you are more than welcome to substitute in frozen okra or omit it completely. Try serving over cooked rice as the perfect vessel to soak up all the bayou-inspired flavors.

Smoked Sausage Stew Recipe

Kielbasa stew is a quick recipe that you can make on a busy weeknight, or make it on the weekend, and reheat it later on in the week. The flavors will improve as it sits in the refrigerator.

The flavors are bayou inspired with a tomato based sauce that coats peppers, onions, smoked sausage and lima beans.  I honestly think there’s no way you can screw this recipe up.  Use a little more or a little less, and kielbasa skillet will still turn out tasty.

Smoked Sausage Stew Ingredients

  • Olive Oil
  • Smoked Sausage
  • Green Peppers
  • Onion
  • Tomato Paste
  • Garlic
  • Chicken or Vegetable Broth
  • Diced Tomatoes
  • Frozen Lima Beans

If you aren’t a fan of Lima Beans, substitute Okra or leave them out completely.

How to Make Smoked Sausage Stew with Peppers

Step by Step Instructions

  1. Sauté smoked sausage, green peppers and onions in olive oil over medium-high heat until the vegetables are soft.
  2. Add tomato paste and minced garlic, and stir for 30 seconds.
  3. To the mixture, add broth, lima beans and undrained diced tomatoes.
  4. Simmer uncovered until beans are tender and the sauce is thick.
  5. If desired, add hot sauce to taste.
  6. Serve over cooked rice.

Storage Instructions

Let leftovers cool; transfer to an airtight container and store in the refrigerator for up to a week.
