My kids absolutely go wild for Mexican Lasagna. A mixture of ground beef, corn and salsa is layered between corn tortillas and cottage cheese making for an easy casserole that feeds a crowd.

Mexican Lasagna Recipe:

Why haven’t I been making this easy peasy Mexican ground beef casserole more often? My kids practically applauded me as they were licking plates after their second helpings.  I mean, what isn’t there to like about it?

Hamburger- check

Corn- check

Salsa- check

Cheese – check

Everything my kids love wrapped up into one casserole. This ranks right up at the top of their favorite ground beef recipes list along side Classic Sloppy Joes, Frisco Melt Tater Tot Casserole, and French Onion Sliders.

Let me break down the lasagna layers. If you don’t follow this exactly, don’t sweat it.  It will still be amazing!

Taco Lasagna Layers:

  1. Ground Beef Mixture
  2. Corn Tortillas
  3. Cottage Cheese
  4. Corn Tortillas
  5. Cottage Cheese
  6. Ground Beef Mixture
  7. Shredded Cheese

The leftovers (if you have any) are even more delicious!  Serve up with a side salad and dinner is served.

How to Make Mexican Lasagna Casserole (with corn tortillas):

Instructions:

  1. Brown ground beef, onions and green peppers; drain excess grease if needed.
  2. Add salsa, corn, cumin and chili powder; stir.
  3. In a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray, layer 1/2 meat mixture, 5 corn tortillas, 1 cup cottage cheese, remaining 5 corn tortillas, 1 cup cottage cheese, remaining 1/2 of meat mixture and top with shredded cheese.
  4. Bake in a preheated 375 degree F for 30 minutes. Let rest 10 minutes before cutting.

Notes About Taco Lasagna:

  • This is a Mexican Lasagna casserole with corn tortillas.  If you prefer, use flour tortillas. We use the 6-inch tortillas.
  • We use a glass 9 x 13 inch baking dish. See some of our favorite kitchen essentials in our Amazon Store.
  • Change up the shredded cheese to Colby, Pepper Jack or whatever you prefer.
  • Want to make it a little lighter?  Use ground turkey and fat free cottage cheese.
  • For a spicy taco lasagna, use salsa that is medium in heat.
  • Top with sliced olives or jalapenos if desired.
  • To prevent the taco lasagna casserole from falling apart when cutting, let rest 10 minutes once removed from the oven.

  • 1 pound ground beef
  • 3/4 cup diced onion
  • 3/4 cup chopped green pepper
  • 24 ounces jarred salsa
  • 15.25 ounces canned corn, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 10 corn tortillas 6-inch size
  • 2 cups cottage cheese
  • 1-2 cups shredded cheddar cheese
