What is mexican lasagna?

Mexican lasagna is a delicious casserole made with layers of ground beef, corn, salsa, and cottage cheese sandwiched between corn tortillas. It’s an easy and flavorful dish that’s perfect for feeding a crowd.

Let me break down the lasagna layers. If you don’t follow this exactly, don’t sweat it.  It will still be amazing!

Taco Lasagna Layers:

  1. Ground Beef Mixture
  2. Corn Tortillas
  3. Cottage Cheese

How to Make Mexican Lasagna Casserole (with corn tortillas)

Step by Step Instructions

  1. Brown ground beef, onions and green peppers in a large skillet; drain excess grease if needed.
  2. Add salsa, corn, cumin and chili powder; stir.
  3. In a 13 x 9 inch baking dish or pan that has been sprayed with nonstick cooking spray, layer 1/2 meat mixture, 5 corn tortillas, 1 cup cottage cheese, remaining 5 corn tortillas, 1 cup cottage cheese, remaining 1/2 of meat mixture and top with shredded cheese.
  4. Bake in a preheated 375 degree F for 30 minutes. Let rest 10 minutes before cutting.
  5. If desired, garnish with sour cream, homemade guacamole, sliced avocados, fresh cilantro, black olives, etc.

Storage Instructions

Let leftovers cool. Transfer to an airtight container, and store in the fridge for up to a week.
