I love this easy egg salad recipe when I need a quick lunch for myself during the week. I typically eat in as an open face egg salad sandwich but served on a toasted whole wheat English muffin. It’s my comfort food.
Don’t get me wrong, I love making a classic egg salad recipe like this one, but sometimes, I only want to make it for myself since my kids aren’t super excited about egg salad like I am.
This recipe is beyond basic with only three ingredients – hard boiled eggs, relish and mayo. You have the opportunity to embellish or garnish as you see fit. See the list of recipe variations further down in this post.

Deviled Egg Spread
The original recipe name in the green McCall’s Cook Book is Deviled-Egg Spread. Their intention was to use this as a filling for a canape spread. A canape is a small appetizer or hors d’oeuvre or in other words, little small bites.
I took the recipe and modified it as a portion of egg salad for one person. I’ve been trying to eat more protein at each meal, and eggs are a great source of protein. It’s quick to throw together at lunch time, and spread on a toasted English muffin.
Plus, deviled egg spread (aka egg salad spread) is the perfect way to use up leftover dyed Easter eggs. Just be sure they’ve been refrigerated properly and that the dye was safe to consume.
How to make egg salad for one person?
Step by Step Instructions
- Peel eggs, and dispose of the shells.
- Grate hard boiled eggs using a boxed grater. Or, press the eggs through a coarse sieve, if desired.
- In a large bowl, combine grated eggs, pickle relish, and mayo. Stir gently.
- Taste, and add salt and pepper, if needed.
- Serve the egg salad on a toasted English muffin, bagel or slice of toast or with your favorite crackers. This also tastes great in a lettuce wrap.
Storage Instructions
Technically, there shouldn’t be any leftover! But if you do have some deviled egg spread leftover, store it in an airtight container in the fridge for up to 3 days.
