- 3 hard boiled eggs
- 3/4 to 1 1/2 Tablespoons sweet pickle relish
- 2 - 3 Tablespoons mayonnaise
Peel hard boiled eggs.
Use a box grater to grate the eggs.
In a medium bowl, combine eggs, relish and mayo. Start with less relish and mayo and add more if needed. Stir gently.
Taste, and add salt and pepper, to taste.
Serve on a toasted English muffin, bagel, toast, crackers or as a lettuce wrap.
