Cold Seafood Salad Recipe
This recipe comes straight from Cape Canaveral, Florida. My parents are snow birds who travel south to Florida for the winter months.
One of their favorite lunch time meals is from a fresh seafood counter called Seafood Atlantic. They purchase a cold seafood salad with fresh caught shrimp, imitation crab, lemon juice, celery, onion, mayo and fresh dill.
It is so tasty that they look forward to it all year long. Over the years, I have visited many winters, and we always stop by the seafood counter on the way back from the airport. It’s my first snack I eat. So, I took to recreating this amazing, cold seafood salad so I can eat it all year long.
Ingredients
- Imitation Crab, aka Krab Meat (also known as surimi)
- Cooked Shrimp
- Celery, chopped
- Onion, chopped
- Mayonnaise (preferably mayo with olive oil)
- Fresh Lemon Juice
- Fresh Dill
How to make a cold seafood salad?
Step by Step Instructions
- In a large bowl, gently stir together imitation crab, cooked shrimp, chopped celery and onion, mayonnaise, lemon juice and fresh, snipped dill.
- Taste and adjust ingredients.
- Serve with crackers, tortilla chips or crab salad sandwiches.
Storage Instructions
Store leftovers in an airtight container in the refrigerator for up to 48 hours.
Recipe Variations
- Use red onion instead of white or yellow.
- Omit shrimp completely.
- Use real crab meat instead of imitation.
- Zest the lemon and add the lemon zest for more flavor.
- If desired, season with salt and black pepper.
- Add diced bell peppers.
- Fresh dill is my favorite, but you could you other fresh herbs.
- Add cooked macaroni to make it a seafood pasta salad.
