Here’s the scenario. I had just gotten home from church, and I had approximately an hour and a half until my oldest would be home from practice and when the whole family would be starving.
I had a couple recipes in mind, but I was missing a key ingredient for every meal.
Looking in the fridge, I saw a package of pork steak thawing, and in the cabinet, I spied a can of cream of chicken soup and a can of condensed tomato soup.
I also had three potatoes and a handful of carrots to use up. The challenge was on.
Quickly, I seasoned the pork steaks with salt and pepper, and browned them in oil, just like Mom does. Next, I peeled the potatoes and carrots, and sliced in uniform pieces.
I arranged the pork in the bottom of a casserole dish and arranged the sliced potatoes and carrots over top. Then I mixed together the cream of chicken and tomato soup to make a sauce. I smothered the top of the casserole with the sauce, covered with foil and baked.
Once all the vegetables were fork-tender, I removed the foil and broiled for a few minutes to reduce the sauce.
