This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve.

We love a good casserole as much as Grandma always did. The reason being is that they are so versatile.  The meat can be changed up based on what you have on hand.  Try swapping out smoked sausage for ham in our Cheesy Smoked Sausage and Rice Casserole.  Or, instead of frozen mixed veggies, use a bag of frozen broccoli if that’s what your family loves.  That makes a whole new meal!

Keep your pantry and refrigerator stocked to make casserole cooking easy.  Here’s a list of groceries to keep on hand to make casserole cooking easy:

  • cream soup (cream of chicken, cream of mushroom, cream of celery)
  • canned chicken, salmon and tuna
  • sour cream
  • mayonnaise
  • frozen vegetables (broccoli, mixed vegetables, peas, etc.)
  • egg noodles
  • dry pasta such as macaroni
  • instant rice
  • bread crumbs
  • crackers (for topping)
  • kielbasa

Have you ever tried to make a casserole ahead and serve it the day of. Prep the casserole the night before, refrigerate and bake when you need it.   Or, you could prep and bake the casserole, and then warm it up for smaller meals throughout the week.  Another option is to prep, freeze, and then pull out the casserole when a busy night presents.  Bake and serve!
