Salted Nut Squares are an easy, no bake cookie recipe with a creamy, peanut butter base that is perfectly complemented by salted peanuts.  This irresistible dessert just so happens to be a copycat Payday Bar.  This microwave recipe is simple with only five ingredients (salted peanuts, butter, peanut butter chips, condensed milk, and miniature marshmallows).

I love discovering new cookie recipes.  We have our old favorites of course (Dainty Logs, Ultimate Chocolate Chip and Chocolate Crinkles), but the joy behind discovering a new favorite is the best.  These Salted Nut Roll Cookies are definitely on our best ever list.

This particular Salted Nut Square recipe came from my Pot O’Gold Cookbook.  I’ve said it time and time again, but those old church cookbooks are the best.  All the recipes are winners. I mean, who in their right mind would submit a bad recipe for a church cookbook?  The answer is NOBODY!

Think of a Salted Nut Roll or a PayDay candy bar, and this easy recipe takes those flavors and turns it into bar form.  And, they only take five ingredients, five SIMPLE ingredients.  Salted Peanuts, Butter, Peanut Butter Chips, Sweetened Condensed Milk, and Mini Marshmallows.

How to Make Salted Nut Bars:

Instructions:

  1. In a microwave safe bowl, melt butter and peanut butter chips in 30 second intervals, stirring between each.
  2. Once melted, add sweetened condensed milk and marshmallows, and return to the microwave for additional 30 second intervals until everything is melted and smooth.
  3. Sprinkle half the peanuts into an ungreased 11 x 17 inch baking dish; pour melted peanut butter mixture over peanuts and top with remaining peanuts.  Press the peanuts into the base.
  4. Refrigerate until set, and cut into squares or bars.

Ingredients

  • 3 cups salted peanuts without skins
  • 3 Tablespoons butter
  • 10 ounces peanut butter chips
  • 14 ounces sweetened condensed milk
  • 2 cups mini marshmallows

Instructions

  • In a microwave-safe bowl, melt butter and peanut butter chips in 30 second intervals, stirring between each until melted and smooth.
  • Add sweetened condensed milk and marshmallows to mixture, and continute to microwave for 30 second intervals until completely melted and smooth.
  • Pour half the peanuts evening into the bottom of an ungreased 11x17 inch dish. Pour melted mixture over top of peanuts; sprinkle the top with the remaining peanuts. Gently press the peanuts so they stick to the center filling.
  • Cover and refrigerate until set. Cut into squares.
