It’s summer break, and I’ve been taking my kiddos all over the place doing new and fun activities including blueberry picking.

The kids really enjoyed getting under the nets and snagging blueberries to fill up their buckets, and I appreciated getting three times as many blueberries as I would have on my own.

This is also a great way to introduce new foods to picky eaters. My oldest isn’t the biggest fan of berries in general, but she was more than willing to try them again after she put in all that effort of picking.

So I was on the lookout for blueberry recipes using fresh blueberries.  This is actually kind of hard to find in all of my old cook books, but I spotted this Fresh Blueberry Cake recipe in my Revel, Junior League of Shreveport Cook Book.

Moist Blueberry Cake Recipe

This blueberry cake with cream cheese is particularly moist. It’s the combination of the eggs, butter, cream cheese, and oil added to the dry cake mix.

The combination of these ingredients plus the hands down, amazing lemon glaze take this recipe over the top.

Props to Dad who recommended that I add a special touch at the end.  This blueberry cake with cream cheese was good on its own with just a simple dusting of powdered sugar, but the easy lemon glaze makes it spectacular.

Don’t discount  good glaze; and don’t worry, it’s easy to make.

Fresh Blueberry Cake Ingredients

Boxed Cake Mix (white, yellow or butter cake)

Large Eggs

Butter, room temperature

Cream Cheese, softened

Vegetable oil

Fresh Blueberries (or frozen)

Lemon Glaze Ingredients

Lemon Zest

Fresh Lemon Juice

Powdered Sugar (confectioners’ sugar)

How to Make Blueberry Cake using a Cake Mix

Step by Step Instructions

  1. Using an electric mixer, cream together cake mix, eggs, softened butter, softened cream and oil until smooth.
  2. Fold in fresh blueberries.
  3. Pour into a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray.
  4. Bake in preheated oven until toothpick comes out clean.
  5. Let cool 20 minutes before glazing.

How to Make a Lemon Glaze:

  1. In a medium sized bowl or a 4-cup liquid measure, whisk together lemon zest, lemon juice and powdered sugar.
  2. Add butter to mixture, and microwave for 30-45 seconds.
  3. Stir until smooth.
  4. Drizzle over cake, gently spread out the glaze if needed.
