Dinner is on the table, and everyone is happy when you make this easy sausage casserole with egg noodles. Mom is happy because everyone is practically licking their plates without going over budget.
The kids are happy because they get a meaty, saucy dinner that they absolutely love. Dad is happy, because let’s be real, when Mom is happy, then Dad is happy too.
Chili Sausage Supper
The original name of this dinner is Chili Sausage Supper. I found it in my vintage lime green Betty Crocker Recipe box from the flea market. This is one of my favorite flea market finds yet.
The ground sausage noodle casserole reminds me of a Hamburger Helper type dinner. Instead of ground beef, it uses ground pork sausage. The flavor of this ground sausage dinner is way way way better than one of those box mixes.
Plus, all the ingredients are tossed into one skillet which makes clean up a cinch.
Ground Sausage and Noodles
I’m not sure about your kids, but mine tend to eat any meal with some type of ground meat in it. They almost never complain if their plate has some type of ground beef or ground sausage.
That’s why I’m always on the lookout for new recipes. Let’s face it, spaghetti, tacos and biscuits and gravy tend to get a little old. It’s time to jazz up your weekly dinner rotation by adding this easy ground sausage and noodle recipe.

Ground Pork Sausage (Bulk Pork Sausage)
Onion, diced
Green Pepper, chopped
Wide Egg Noodles
Canned, Diced Tomatoes
Sour Cream
Sugar
Salt
Chili Powder

How to Make Casserole with Pork Sausage and Noodles
- Cook ground pork sausage, diced onions and chopped peppers until meat is brown and onions are tender. Drain off excess oil, if needed.
- To the skillet, add wide egg noodles, undrained diced tomatoes, sour cream, water, sugar, salt and chili powder; stir. *** If your kids do not like big chunks of tomatoes, add the tomatoes first to the meat by themselves, and break into smaller pieces with a meat chopper.
- Cover and simmer for 25 to 30 minutes or until noodles are cooked, stirring often. If noodles begin to stick, add a little bit more water.

Notes About Sausage and Egg Noodle Recipe
- Any type of bulk sausage would work. I typically use a breakfast sausage since that’s what I have on hand.
- Sometimes I use dried, minced onion instead of fresh. Easy substitution!
- Do not drain the diced, canned tomatoes. I like to break the tomatoes up to make them more palatable for the kids. I use a meat chopper like this one.
- I always add sugar to recipes with canned tomatoes or tomato sauce. The sugar will help tone down the acidity of the tomatoes.
- If you like a spicier dish, add more chili powder.
- Add just enough water so that all the uncooked noodles are covered. If the dish starts to stick, stir in a little bit more water as it cooks.

Ingredients
- 1 pound ground pork sausage (bulk sausage)
- 1 onion, diced
- 1 green pepper, chopped
- 16 ounces canned, diced tomatoes (do not drain)
- 8 ounces wide egg noodles uncooked
- 1 cup sour cream
- 1 Tablespoon sugar
- 1 teaspoon salt
- 1 - 2 teaspoons chili powder
- 1 1/2 cups water (approximate)
Instructions
- In a large skillet, brown ground pork sausage, onions and green pepper. If needed, drain off excess grease.
- Add canned tomatoes, breaking into smaller pieces, if desired.
- To the skillet, add wide egg noodles, sour cream, sugar, salt and chili powder. Add the water so it's just covering all the dry noodles.
- Cover and simmer for 25 to 30 minutes, stirring often, until the noodles are tender.
