Chili Sausage Supper

The original name of this dinner is Chili Sausage Supper. I found it in my vintage lime green Betty Crocker Recipe box from the flea market. This is one of my favorite flea market finds yet.

The ground sausage noodle casserole reminds me of a Hamburger Helper type dinner. Instead of ground beef, it uses ground pork sausage. The flavor of this ground sausage dinner is way way way better than one of those box mixes.

Plus, all the ingredients are tossed into one skillet which makes clean up a cinch.

I’m not sure about your kids, but mine tend to eat any meal with some type of ground meat in it. They almost never complain if their plate has some type of ground beef or ground sausage.

How to Make Casserole with Pork Sausage and Noodles

Step by Step Instructions

  1. Cook ground pork sausage, diced onions and chopped peppers in a large pan or skillet on the stove top over medium-high heat until meat is brown and onions are tender. Drain off excess oil, if needed.
  2. To the skillet, add wide egg noodles, pour in undrained diced tomatoes, sour cream, water, sugar, salt and chili powder; stir. *** If your kids do not like big chunks of tomatoes, add the tomatoes first to the meat by themselves, and break into smaller pieces with a meat chopper.
  3. Cover and simmer for 25 to 30 minutes or until noodles are cooked, stirring often. If noodles begin to stick, add a little bit more water.

Storage Instructions

Let leftovers cool completely. Transfer to an airtight container, and store in the fridge for up to a week. Rewarm in the microwave.

  • Use ground beef or ground turkey instead of sausage.
  • Try different types of ground sausage. Make an Italian version with Italian sausage and canned Italian tomatoes.
  • Bacon makes everything better!

  • 1 pound ground pork sausage (bulk sausage)

  • 16 ounces canned, diced tomatoes (do not drain)

  1. I altered the recipe with my attempt at it. Seeing 3 teaspoons of sugar seemed too much, I used 1 tsp instead. Still too sweet for my tastes. Not a fan of sour cream, so I skipped it. Tasted pretty good. Next time, I’ll add the onions & pepper when I do the noodles. They were a bit too soft.
