Ingredients for Chicken, Spinach and Bows Casserole

  • Pasta, cooked: The original recipe called for bowtie (farfalle) pasta but you can use rotini or medium shells. You want pasta with some surface area.
  • Cream of Chicken Soup: If you don’t have cream of chicken soup, use cream of mushroom soup.
  • Frozen Chopped Spinach: When you thaw the frozen spinach, you can squeeze out the extra moisture in a paper towel or dish towel.
  • Boneless, Skinless Chicken Breasts, cooked: The original recipe calls for 4 to 5 chicken breasts, which is equal to 4 to 5 cups of cubed chicken. You can use pre-cooked diced chicken, leftover rotisserie chicken or even canned chicken breast meat instead.
  • Colby Jack Cheese, shredded: While Colby Jack cheese is a favorite of ours, really any kind of cheese would work, including Cheddar or Monterey Jack.

How to Make Chicken Casserole with Spinach

  1. Combine cooked pasta, spinach, chicken, soup, and half the cheese.
  2. Stir until coated.
  3. In a lightly greased casserole dish, pour in the mixture.

  5. Bake, covered until heated through and cheese is melted.

Ingredients

  • 16 ounces Bowtie Pasta cooked
  • 26 ounces Cream of Chicken Soup
  • 16 ounces Chopped Spinach, frozen thawed
  • 4 cups Chicken Breast, cooked and diced
  • 8 ounces Colby Jack Cheese shredded
  • 1 Tablespoon Butter sliced
  • Salt and Pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Combine cooked pasta and soup. Stir until coated.
  • Add spinach, chicken and half of the cheese.
  • In a lightly greased 3-quart casserole dish, pour in casserole mixture.
  • Bake covered for 30 to 45 minutes, until heated through and cheese is melted.
  • Optional: Broil for the last 3-5 minutes to brown the cheese.

  • Substitute cooked, diced chicken, leftover rotisserie chicken or canned chunk chicken breast.
  • If you don’t have cream of chicken soup, use cream of mushroom soup.
