What to Expect

This week at These Old Cookbooks, we are serving up delicious meals that Grandma would approve!

One way that helps us meal plan is to have a different type of protein each day of the week.  Variety is good!  It introduces kids to different flavors and textures which helps them become less picky over time.  This week, we have chicken thighs, pork sausage, kielbasa, canned chicken, chicken legs, ground beef, and canned tuna.

Chicken thighs and legs can be purchased on sale, and then tossed in the freezer in air-tight packages in portion controlled sizes.  We always have canned chicken and canned tuna in the pantry; they are both pantry staples that we use all the time. Kielbasa is another one of those proteins that we tend to keep in the refrigerator for casseroles or easy fried kielbasa sandwiches–easy for farmers during the fall.  A great way to save big on ground beef is to purchase a quarter or a half of beef from a farmer, and then stock your freezer.  The meat tastes great, too!

We are continuing to save money by using in season produce.  Zucchini, summer squash, peppers and apples are all cheap right now. These can be found in many of our entrees and side dishes this week.  Plus, they flavors tend to be better when you use them in-season.

Weekly Meal Plan, Week 25

Saturday: Crock Pot Mock Fried Chicken, Stewed Summer Squash and Tomatoes

It’s the weekend. Stop and have a drink. Try an Italian Margarita from Farm Wife Drinks.

Stewed Summer Squash and Tomatoes is a light side dish that can be served along the meat of your choice or eaten alone for a vegetarian option.  A base of onions, tomatoes and peppers compliment zucchini and yellow squash, and it's made in one skillet, making kitchen clean-up a cinch. 

Sunday: We love serving brunch! Try Egg and Sausage Breakfast Casserole and Pumpkin Bran Muffins.

This Egg and Sausage Breakfast Casserole can easily be doubled to feed a crowd - or a hungry family - and is perfect served with a side of fruit.

Monday: Instant Pot Boiled Kielbasa Dinner

This Instant Pot Boiled Kielbasa Dinner features cabbage, potatoes and corn and is ready in less than 15 minutes. It is a perfect summer meal when sweet corn is in season that the entire family will enjoy. You can also use frozen sweet corn on the cob.

Tuesday: It’s Taco Tuesday. Serve Crock Pot Enchiladas.

Wednesday: Spanish Chicken and Rice Bake

Spanish Chicken and Rice is a new spin on classic baked chicken and rice casserole.  This new and improved version contains peppers and tomatoes and is seasoned up with chili powder for some mild spice.  This one dish dinner will be a new favorite in your weeknight rotation.

Thursday: 10 Minute Lemon Chicken Pasta and Creamed Peas

Friday: Tuna Mac and Cheese
