In all honesty, until recently, it had been years since I’d purchased a box of scalloped potato mix. But now, I’m hooked. That’s because, in my vintage Betty Crocker Recipe Set, there’s several shortcut dinners that use boxed potatoes.

What do I need to make a pizza scalloped potato casserole?
- Package of Scalloped Potatoes
- Canned, Diced Tomatoes
- Water
- Dried Oregano
- Sliced Pepperoni
- Shredded Cheese
How to Make Pizza Potato Casserole
- Preheat oven to 400 degrees F.
- Pour undrained diced tomatoes in a large skillet. Break them up to smaller pieces (optional). Use a meat chopper like this one.
- Stir in water and oregano; bring to a boil.
- Once boiling, turn off heat, and add dried potato packet and seasoning packet.
- Pour into a 2 quart baking dish.
- Arrange pepperoni slices to completely cover the top. Sprinkle with shredded cheese.
- Bake for 30 to 35 minutes. If you don’t like crusty cheese topping, lay a piece of aluminum foil on top of the casserole while baking.
- Let sit for 5 – 10 minutes before serving.

Notes About Scalloped Potato Pizza Casserole
- I use a regular package of scalloped potato mix but the cheesy variety works too.
- Use as many pepperoni as your heart desires. I cover the entire top of the casserole with pepperonis barely overlapping.
- For the shredded cheese, mozzarella is great but sometimes I use a Gruyere Swiss mixture.
- I also like to stir in 1/2 pound of fried up ground pork sausage from time to time for a new spin.
- My kids do not like large chunks of tomatoes. I almost always break up diced tomatoes from a can into smaller pieces. A meat chopper is the perfect tool for this task; however, you can leave them as is, if desired.

- 5 ounce box of scalloped potato mix
- 16 ounces canned, diced tomatoes (do not drain)
- 1 1/2 cups water
- 1 teaspoon dried oregano
- 12 ounces sliced pepperoni use as many as you like
- 1 – 2 cups shredded cheese
Instructions
