It’s cucumber season, and my Dad’s garden is producing tons and tons of cucumbers. I particularly love cucumbers straight from the garden. We tend to pick them early when they are on the smaller side without many seeds.
I actually peel mine and then eat them like I would a banana. Kinda strange, but oh, so yummy.
When I’m not strangely eating my cucumbers, I slice them up with onions in some sort of cucumber salad.

For years, I’ve been making Mom’s Cucumbers and Onions which is a vinegar- based cucumber salad; however, I really like creamy cucumber salads too.
I really like this recipe for Creamy Cucumbers using mayo which comes from way up in the mountains of West Virginia. I found the original recipe in the cook book called Heavenly Food from Our Holy Mountain.
Mayonnaise, milk and sugar are combined for a simple, yet creamy dressing.

How to Make Creamy Cucumbers with Mayonnaise (no vinegar)
Step By Step Instructions
- Peel (optional) and slice cucumbers. Slice onions. Place both in a large bowl, sprinkle with salt and black pepper. Stir.
- Let cucumbers and onions sit in the refrigerator for a minimum of 30 minutes.
- Drain excess water.
- In a separate bowl, combine mayonnaise, milk and sugar until smooth.
- Pour over cucumbers and onions, and toss. Cucumber salad will thin out as it sits in the fridge.
Storage Instructions
Transfer to an airtight container, and store in the refrigerator for 3 to 5 days.

Ingredients
- 3 cucumbers
- 1 medium onion
- 1 teaspoon salt
- 3/4 teaspoon black pepper
- 1 cup mayonnaise
- 1 teaspoon sugar (heaping)
- 2 Tablespoons milk
Instructions
