This recipe for Golden Graham s’mores bars with corn syrup is vintage, coming from a 1979 Cook Book of Recipes from Women Educators.
I can imagine a teacher making up a batch of No Bake Smores for her students and automatically being named the teacher of the year.
The problem is that I can’t stop eating them. I love how they are soft, yet crunchy from the Golden Graham cereal. And who doesn’t like the combination of milk chocolate and marshmallows.

How to Make Golden Graham S’mores Bars with Corn Syrup

- Spray a 13 x 9 inch baking dish lightly with nonstick cooking spray.
- In a medium sized saucepan, melt butter, white corn syrup and milk chocolate chips. Stir constantly until almost boiling.
- Remove from heat, stir in vanilla extract.
- Pour over Golden Graham cereal until all pieces are coated in chocolate.
- Stir in mini marshmallows.
- Press the mixture into prepared 13 x 9 inch baking dish. Let stand until firm, at least one hour.
- Cut into squares or rectangles.
Notes About Golden Graham Cereal Bars Recipe
- For authentic smores flavor, use milk chocolate chips or Hershey’s brand chips in these smores bars. Semi-sweet chocolate or even white chocolate chips could be used for a new variation.
- Generic Golden Graham cereal works fine too.
- Use white corn syrup, not dark. The flavor is not the same.
- Butter or margarine works well.
- Work quickly when pouring the chocolate mixture over the cereal mixture so that it doesn’t set up before you’re ready.
- I recommend reserving 1 cup of Golden Graham cereal from what’s in the recipe. If there’s plenty of chocolate, go ahead and add it. If it seems dry, leave out the last cup. This ensures each bite tastes like a smore and isn’t too dry.

Indoor S'mores Bars - Golden Grahams S'mores Bars Recipe
Ingredients
- 2/3 cup light corn syrup
- 2 Tablespoons butter
- 11.5 ounces milk chocolate chips
- 1 teaspoon vanilla extract
- 8 cups Golden Graham cereal
- 3 cups mini marshmallows
Instructions
- Prepare a 13 x 9 inch baking dish by spraying with nonstick cooking spray lightly.
- In a medium saucepan, heat corn syrup, butter and milk chocolate chips until almost boiling; remove from heat and stir in vanilla extract.
- Pour over cereal and toss quickly until cereal is completely coated with chocolate. (see notes)
- Stir in mini marshmallows.
- Press into prepared dish.
- Let sit at least one hour to firm up before cutting.
