I love having an arsenal of recipes using leftover holiday ham, but also recipes using ham steaks that I keep in the freezer. It’s so handy to chop up ham into small pieces to use in a whole new dinner.

This particular ham hash and poached eggs recipe practically jumped right off the page and into my skillet.

There’s something in this dish for everyone if you know what I mean. I often wonder how my kids came from the same two parents yet are so different in so many way, including their food palate.

My youngest cannot eat eggs without immediately gagging, so for his portion, I scooped around the eggs. My middle eats ham, but it isn’t her favorite; however, eggs are her number one choice. So for her plate, she got extra eggs, and less ham. Lastly, my oldest, absolutely loves ham and soft cooked potatoes, so her plate was heaped up high with the ham and potato hash.

You could also omit the eggs completely, or add more eggs to the dish if needed.

How do you make potato hash from scratch?

Step by Step Instructions

  1. In a large nonstick skillet with a tight-fitting lid, stir together potatoes, oil, salt, onion, green peppers, ham and 2 cups hot water. Bring the mixture to a boil, cover and boil for 10 minutes over medium heat.
  2. Remove the lid, and continue to cook, turning the potatoes occasionally until most of the water is absorbed.
  3. With the back of a spoon, make 4 indentions in the hash mixture.
  4. Carefully, break the egg into each indention; cover and cook over low heat for approximately 5 minutes or until the eggs are set to your liking.
  5. Sprinkle with black pepper, and more salt, to taste.

Storage Instructions

Let leftovers cool completely. Transfer to an airtight container, and store in the refrigerator for up to 3 days.

Ingredients

  • 20 ounces packaged, sliced potatoes (refrigerated)
  • 3 Tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 cup diced onions
  • 1/2 cup diced green peppers
  • 1 cup cooked ham, diced
