Barbara and I grew up with a dad, uncle and grandpa who farmed and a mom who taught school. What this meant for us in the fall is that our mom fixed a lot of cold ham, turkey or roast beef sandwiches for my dad and uncle as they worked to harvest the corn and soybeans. Since our mom retired several years ago, she has more time to be creative when it comes to harvest dinners, but my dad still prefers a sandwich that he can eat in the combine cab versus a full-on meal that requires him to stop. But sometimes she struggles coming up with something “different.”
