  • 1/2 cup Honey
  • 2 Tablespoons Butter or Margarine
  • 1 teaspoon Ground Cinnamon (divided)
  • 32 ounces Mixed Nuts no peanuts
  • 2 - 3 Tablespoons Superfine Sugar

  • In a large, deep saucepan, combine honey, butter and 1/2 teaspoon ground cinnamon.

    • This recipe makes 4 cups of honey roasted mixed nuts. A serving size it 1/4 cup, so there are 16 servings.
    • I use salted mixed nuts. The combination of the salty and the sweet of the honey is perfect. If you use unsalted nuts, consider adding some salt with the superfine sugar mixture.
    • The recipe states that the mixed nuts should not contain peanuts; however, it's not the end of the world if you have peanuts in there too.
    • Be sure to use a deep saucepan. The honey will expand when boiling, and will boil over the side of a shallow pan. (I know from experience.)
    • Superfine sugar is found in the baking aisle of the grocery store. 
    • The cinnamon is divided for this recipe. 1/2 teaspoon goes in the honey mixture, and 1/2 teaspoon gets mixed with the superfine sugar.
