Ingredients

  • 2 cups crushed cornflakes, divided
  • 1/2 cup butter
  • 4 - 6 cups green cabbage, shredded thickly
  • 4 cups ham cubed
  • 2 cans cream of celery soup (10.5 ounce cans)
  • 1/4 cup mayonnaise
  • 1 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees F. Place a stick of butter in a 13 x 9 inch baking dish and place in the oven until just melted.

Notes

  • Keep an eye on the butter as it melts so it doesn't brown.
  • Substitute margarine for butter, if needed. 
  • I shred my green cabbage on the thicker side.  If you shred yours thin, adjust the cooking time.
  • Be sure you're using unsweetened cornflakes not Frosted Flakes!
  • This is a great way to use up leftover spiral or holiday ham; however, Canadian Bacon or deli ham works too!
  • If desired, substitute cream of chicken or cream of mushroom for cream of celery.
  • The cabbage cooks down quite a bit, so don't be concerned if it's mounded up a bit in the baking dish. 
  • This dish is steaming hot when it comes out of the oven; let it rest for around 15 minutes before serving and eating.
