Impossible Chicken Parmesan Pie

Impossible Chicken Parmesan Pie is impossibly easy to throw together for a quick weeknight meal.  Three layers of cheesy goodness combine to form a pizza pie that the whole family will love.

  • 3/4 cup cottage cheese
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 cups cooked chicken, cut up or shredded
  • 1 1/4 cups shredded Mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 6 ounces tomato paste
  • 1 cup milk
  • 2 eggs
  • 2/3 cup Bisquick
  • 1/4 teaspoon black pepper
  1. Preheat oven to 400 degrees F. Spray a pie pan with non-stick cooking spray.

  2. Mix cottage cheese and grated Parmesan cheese; spread into the bottom of the pie plate.

  3. Combine chicken, 1/2 cup shredded Mozarella cheese, garlic powder, dried oregano and basil and tomato paste; spoon over cheese mixture.

  4. Using a blender, beat milk, eggs, Bisquick and pepper fro 15 seconds; pour into pie plate over both layers.

  5. Bake for 30 minutes; top with remaining 3/4 cup shredded Mozzarella. Bake for 5 additional minutes; if desired, broil for 1 minute until golden brown.

  6. Let stand for 10 minutes to set up before cutting.

Recipe Notes
  • This is the perfect recipe to use up leftover chicken. Or, use canned chicken if desired.
  • Easy Chicken Pie uses a small can of tomato paste (6 ounce).
  • Substitute fresh herbs for dried if desired.
  • For a golden brown crust, broil for 1-2 minutes at the end. Watch closely so it doesn't burn.
