- 3/4 cup cottage cheese
- 1/3 cup grated Parmesan cheese
- 1 1/2 cups cooked chicken, cut up or shredded
- 1 1/4 cups shredded Mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 6 ounces tomato paste
- 1 cup milk
- 2 eggs
- 2/3 cup Bisquick
- 1/4 teaspoon black pepper
Preheat oven to 400 degrees F. Spray a pie pan with non-stick cooking spray.
Mix cottage cheese and grated Parmesan cheese; spread into the bottom of the pie plate.
Combine chicken, 1/2 of the shredded Mozzarella cheese, garlic powder, dried oregano and basil and tomato paste; spoon over cheese mixture.
Using a blender, beat milk, eggs, Bisquick and pepper for 15 seconds; pour into pie plate over both layers.
Bake for 30 minutes or until knife comes out clean; top with remaining shredded Mozzarella. Bake for 5 additional minutes; if desired, broil for 1 minute until golden brown.
Let stand for 10- 15 minutes to set up before cutting.
- This is the perfect recipe to use up leftover chicken. Or, use canned chicken if desired.
- Easy Chicken Pie uses a small can of tomato paste (6 ounce).
- Substitute fresh herbs for dried if desired.
- For a golden brown crust, broil for 1-2 minutes at the end. Watch closely so it doesn't burn.
