Brownies
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1/2 cup cocoa
- 1/2 teaspoon baking powder
Peanut Butter Fudge
- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 teaspoon vanilla
- 1 3/4 cups powdered sugar
Preheat oven to 350 degrees F.
For brownies, mix shortening, sugar, eggs and vanilla until well blended.
Mix together flour, cocoa and baking powder; add to wet mixture and stir until incorporated. Batter will be thick.
Spread into an 9x9 inch pan that has been lined with parchment papers in both directions with extra paper hanging over the side. This will allow you to pull the brownies out of the pan easily to cut after cooking.
Bake for 25-30 minutes or until toothpick comes out clean. Let cool.
For peanut butter fudge:
Add butter and peanut butter to a microwavable dish. Microwave in 30 second intervals until butter is melted. Mix together until smooth.
Add vanilla and powdered sugar and mix. Pour over brownies and spread to cover the top. Let cool and set up on the countertop.
