- 2 cups ham (leftover ham works best)
- 2 Tablespoons onion
- 1/2 cup breadcrumbs or cracker crumbs
- 2 eggs
- 1 Tablespoon parsley
- 1 teaspoon yellow mustard
- 1/8 teaspoon salt
- 2 Tablespoons butter
Grind ham and onion in a food processor until finely ground.
Add ham and onion, bread crumbs eggs, parsley, mustard and salt to a large bowl. Mix well.
Shape into golf balls (an ice cream scoop works great.)
Shape into patties.
Heat butter in a large skillet over medium heat. Brown both sides of the ham patties until golden brown.
Serve as is, or on a bun as a sandwich.
