- 1 pound ground beef
- 1 small onion, diced
- 4-5 cups yellow squash, cut into 1 inch cubes
- 1/4 cup butter
- 10 3/4 ounces cheddar cheese soup
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 sleeve crushed butter crackers
- 4-5 slices bacon, fried crisp and crumbled
Cook ground beef with diced onion until browned; drained if needed. Season lightly with salt and pepper to taste. Set aside.
Add cubed summer squash to a skillet or medium saucepan; cover with water and boil until fork tender. Drain well.
Add the cooked yellow squash back to the warm pan; add butter and allow to melt.
Add the remaining ingredients except the bacon into a greased 13 x 9 inch baking dish.
Sprinkle with fried chopped bacon.
Cook in a preheated 350 degree F oven for 30 minutes or until golden brown and bubbly.
