Ingredients

Strawberry Jello Cake

  • 15.25 ounces boxed white cake mix
  • 4 large eggs
  • 3/4 cup vegetable oil
  • .44 ounces dry strawberry jello mix
  • 1 cup crushed strawberries
  • 1/4 teaspoon salt

Strawberry Buttercream Frosting

  • 3.5 cups powdered sugar
  • 1/2 cup butter, softened
  • 1/2 cup strawberries, crushed

Instructions

  • Preheat oven to 350 degrees F. Spray either a 13x9 inch baking dish or (2) 9-inch cake round pans with nonstick cooking spray.
  • Add dry cake mix, eggs, oil, jello mix, 1 cup crushed strawberries and salt to a large bowl or the bowl of a stand mixer.

  • Beat for 2 minutes at medium speed.
  • Pour into the prepared dish.
  • Bake for 35 to 40 minutes or until a toothpick comes out clean.

Buttercream Frosting

  • Cream together softened butter, powdered sugar and 1/2 cup crushed strawberries until fluffy using an electric mixer or stand mixer.

  • For a one layer cake, spread over top the 13x9 inch cake. For a layered cake, frost in between the 2 layers and over top and on the sides.

Notes

    • Make this a one layer strawberry cake in a 9x13 inch baking dish, or make a two layered strawberry cake by baking it in two 9 inch round cake pans. If you are doing a two layer, frost in between the layers and over top. 
    • The cake needs to be cooled before icing, or the buttercream will melt.
    • Be sure to soften the butter before making the icing, but do not melt it!
    • If using frozen strawberries, let them thaw, and drain off the extra liquid.
