  • 4 - 6 Chicken Thighs or Chicken Breasts
  • Salt
  • Black Pepper
  • Garlic Powder
  • 3/4 cup BBQ Sauce bottled or homemade (homemade BBQ sauce recipe found below)

Homemade BBQ Sauce (optional)

  • 1/2 cup Ketchup
  • 2 Tablespoons White Vinegar
  • 1 Tablespoon Worcestershire Sauce
  • 1 teaspoon Yellow Mustard
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 cup Brown Sugar

  • Season chicken thighs or chicken breasts generously with salt, pepper and garlic powder

  • Vacuum seal using a vacuum sealer, or using the water displacement method.

  • Place the sealed package in a water bath, being sure it is completely submerged.
  • Cook in a sous vide machine to 145 degrees F for chicken breasts or 165 degrees F for chicken thighs for 1.5 to 2 hours.
  • Once cooking is complete, remove to finish cooking on the stovetop as follows or place in the refrigerator for up to 5 days.

  • To finish cooking, place BBQ sauce (either bottled, premade or homemade) in a large skillet. Nestle the chicken into the barbecue sauce, turning to coat all sides with the sauce.

  • Bring to a simmer over medium heat, basting often.

Notes

    • I oftentimes use a pre-made BBQ sauce from the store, but on occasion when I don't have any on hand, I whip up an easy homemade version. 
    • Broiling is optional, but highly recommended. I love how it makes the glaze sticky like a traditional barbecued chicken recipe.
    • Use any cut of chicken you prefer. I use chicken breasts, chicken thighs and/or chicken legs or chicken drumsticks.
    • Use bone-in chicken or boneless chicken.
    • Season up the raw chicken with whatever you prefer. Some great options are salt free seasoning blends, onion powder, garlic powder, garlic salt, etc.
    • If desired, skip the stove top skillet and/or broiling step. Instead, toss them onto the smoker, baste them in BBQ sauce, and let them finish on the grill.
