Crust
- 1 cup All Purpose Flour
- 1/4 cup Granulated Sugar
- 1/2 cup Butter 1 stick
Rhubarb Layer
- 3 cups Sliced Rhubarb
- 1/2 cup Granulated Sugar
- 1 Tablespoon All Purpose Flour
Cream Layer
- 12 ounces Cream Cheese softened
- 1/2 cup Sugar
- 1 Tablespoon All purpose Flour
- 2 Large Eggs
Topping Layer
- 1 cup Sour Cream
- 2 Tablespoons Granulated Sugar
- 1 teaspoon Vanilla Extract
Add 1 cup flour, 1/4 cup sugar and 1 stick cold butter in a large mixing bowl. Use a pastry blender or 2 forks, cut the butter into the flour mixture until the mixture resembles small peas.
Pat the crust ingredients into a 10 inch pie plate; set aside.
In a separate bowl, combine 3 cups sliced rhubarb, 1/2 cup sugar and 1 Tablespoon flour; toss lightly and pour into the prepared crust.
Bake in a preheated 375 degrees F oven for approximately 15 minutes or until lightly golden brown.
Meanwhile using a stand mixer or hand mixer, beat 12 ounces softened cream cheese and 1/2 cup sugar until fluffy. Beat in the eggs (2) one at a time, and then the 1 Tablespoon of flour. Pour the cream cheese mixture over the rhubarb layer.
Reduce oven temperature to 350 degrees F, and bake for 30 minutes or until just set.
Remove from the oven.
Combine 1 cup sour cream, 2 Tablespoons sugar, and 1 teaspoon vanilla; pour over the hot layer, and chill.
Serve cold.
