Rhubarb Nut Bread - An Amish Rhubarb Bread Recipe

- 1 1/2 cups brown sugar
- 2/3 cups vegetable oil
- 1 egg
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups diced rhubarb
- 1/2 cups chopped nuts
Crumble Topping
- 1 Tablespoon softened butter
- 1/2 cup brown sugar
Preheat oven to 325 degrees F. Grease and flour 2 loaf pans.
Whisk together brown sugar, vegetable oil and egg until incorporated.
In a separate bowl, mix flour, baking soda and salt.
Mix buttermilk and vanilla extract in a different bowl.
Alternately add wet and dry ingredients to brown sugar mixture until combined.
Stir in rhubarb and nuts.
Pour evenly between the two prepared loaf pans.
For crumble topping, use your fingers or pastry cutter to press butter into brown sugar until small pea-sized chunks form. Sprinkle over both loaves.
Bake for 40-45 minutes or until a toothpick comes out clean.
Let cool for 10 minutes in the pan before removing the rhubarb nut bread.
- If needed, substitute canola oil for vegetable oil.
- I recommend chopped walnuts or pecans for the nuts; however, the nuts can be omitted completely.
- Omit the crumble topping, if desired. It's adds a great layer of flavor, so I recommend keeping it!
