- 1 stick butter (divided into 2 halves)
- 1 lb. fajita style or stew beef
- 24 oz. frozen, riced cauliflower (thawed)
- 2 Tablespoons soy sauce
- 12 oz. frozen, shelled edamame (thawed)
- 1 teaspoon minced garlic
- 3/4 cup pho broth (or beef broth)
- 2 eggs
In a large skillet, add a half stick of butter. Melt the butter over medium-high heat, until it begins to sizzle.
Add the thawed fajita or beef stew meat. Brown on both sides of the meat until it has a nice sear to it, but be sure not to over cook. Remove the meat from the pan and set aside.
Add thawed riced cauliflower to the leftover butter in the skillet. Saute for 3 to 4 minutes stirring occasionally so it doesn't stick.
To the cauliflower, add edamame, soy sauce and broth. Turn down heat to medium, and cook for an additional 5 minutes.
Make a well in the middle of the skillet, and crack in 2 eggs. Scramble the eggs until cooked, mixing with the cauliflower mixture.
In the microwave, melt additional half stick of butter, and add minced garlic.
Add melted butter and beef back into the skillet, and stir until mixed. Cook 1 to 2 minutes longer or until heated through.
