- 2/3 cup shortening
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 2 cups brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup buttermilk
- 2 large eggs
Preheat oven to 350 degrees F. Prepare a 13 x 9 inch baking dish by greasing the bottom and sides. (Optional: line the bottom with greased parchment or wax paper).
Using the whisk attachment of a stand mixer, electric mixer or a regular pastry blender, blend 2/3 cup shortening into 2 1/2 cups flour, 1/2 teaspoon salt and 2 cups brown sugar until pea-size crumbs form.
Reserve 1/2 cup of the mixture for the topping.
Add 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon ground cinnamon and 1/2 teaspoon nutmeg to the mixture.
Pour in 1 cup buttermilk and 2 large eggs, and blend until a light and fluffy batter forms.
Pour into the prepared baking dish. Sprinkled reserved crumbs over top.
Bake for 30 - 35 minutes or until a toothpick comes out clean.
Serve with coffee or a large glass of milk.

- If you don't have buttermilk, stir together milk and a splash of lemon juice or white vinegar to use as a substitute.
- A pastry blender is also a great option to make pea-sized crumbs with the flour, salt, brown sugar and shortening.
- Lining the bottom of the pan with parchment paper or waxed paper makes it come out of the pan with ease. It might be overkill, but I tend to grease over the parchment. Be sure to grease the sides of the pan too.
- Separate the cake into two 8 x 8 inch baking pans. Keep one for yourself, and give one to a friend. The cooking time will be shorter around 25 minutes.
