- 2 cups mixed dried beans (15 bean soup mix)
- 2 Tablespoons salt
- 2 quarts water
- 2 cups diced ham
- 1 large onion
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 28 ounces canned, petite tomatoes, undrained
- 2 Tablespoons lemon juice
Rinse dried beans well with water.
Add beans to a large pot; cover with cool water. Add salt and stir.
Let sit overnight; drain well.
Add beans back to the pot. Add 2 quarts water and diced ham.
Simmer for 2 1/2 to 3 hours. If needed, add more water while they are simmering.
Add diced onion, garlic, chili powder, ground cumin, tomatoes with juices and lemon juice. Stir well, and simmer for an additional 45 minutes. (Add more water if needed.)
Season to taste with salt and black pepper.
