- 2 Tablespoons butter
- 1 cup thinly sliced apple
- 2 Tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup all purpose flour
- 1/4 teaspoon salt
- 1/2 cup milk
Preheat the oven to 400 degrees F.
Place 2 Tablespoons butter in a 9-inch pie plate. Place plate in oven until butter melts. Remove immediately.
Brush the butter over all sides and bottom of pie pan.
Sprinkle 2 Tablespoons brown sugar and 1/4 teaspoon ground cinnamon evenly over the butter.
Arrange 1 cup of sliced apples over brown sugar mixture.
Whisk 2 large eggs until just broken.
Stir in 1/2 cup flour, 1/4 teaspoon salt and 1/2 cup milk until the batter is just formed. (Do not overmix)
Pour batter over top the apples.
Bake in preheated oven for 30-35 minutes or until puffed and golden brown.
Immediately loosen the sides with a knife, and then invert to a plate.
Eat warm as is, or dust with powdered sugar, or top with whipped cream or ice cream.

- Don't walk away from the butter melting in the oven. It can brown if left too long.
- Be sure to brush the butter up the sides of the pie pan.
- Do not overbeat the batter. Doing this might cause the pancake not to puff.
- Apples do not need to be peeled, but they can, if desired.
- Be sure to loosen the sides of the pancake and invert immediately after removing from the oven. As the brown sugar cools, it will harden making it impossible to remove later on.
- Serve the pancake quickly before the puffy part sinks to the plate.
