- 1/4 cup butter
- 1/2 cup chopped onion
- 1/2 cup diced bell pepper
- 1 pound ground beef
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/2 Tablespoons Worcestershire sauce
- 8 ounces elbow macaroni
- 10.5 ounces tomato soup
- 1 medium tomato, diced
- 1/2 cup grated Parmesan cheese
Preheat oven to 375 degrees F. Spray a 2 1/2 quart baking dish with nonstick cooking spray.
Melt the butter in large skillet. Add onions and bell peppers, and sauté until soft around 5 minutes.
Add ground beef, and brown, breaking up the meat in small pieces over medium heat, around 5 more minutes.
Add salt, pepper, oregano and Worcestershire sauce.
Meanwhile, cook elbow macaroni in salted water according to package instructions. Cook to al dente, do not over cook. Drain well.
Add beef mixture, tomato soup, chopped onion and elbow macaroni together and mix well. Pour into prepared dish.
Cover and bake for 40 minutes.
Add grated Parmesan cheese, and bake for 5 minutes longer or until golden brown.

- Any color bell peppers will work. The original recipe calls for green peppers, but I used orange bell peppers and yellow bell peppers.
- Use margarine, olive oil, ghee or coconut oil for butter, if desired.
- Let the casserole sit on the counter for 5 to 10 minutes before serving, to let it set up.
