- 5 ounce box of scalloped potato mix
- 16 ounces canned, diced tomatoes (do not drain)
- 1 1/2 cups water
- 1 teaspoon dried oregano
- 12 ounces sliced pepperoni use as many as you like
- 1 - 2 cups shredded cheese
Preheat oven to 400 degrees F.
Pour a can of diced tomatoes into a large skillet; if desired, break up the tomatoes into smaller chunks.
Stir in water and dried oregano; bring to a boil
Turn off heat; mix in potato packet and seasoning packet.
Pour into an ungreased 2 quart casserole dish.
Arrange pepperonis on top of potato mixture.
Sprinkle the top with shredded cheese.
Bake for 30 - 35 minutes.
Let rest for 5 to 10 minutes before serving to let it set up.
- I use a regular package of scalloped potato mix but the cheesy variety works too.
- Use as many pepperoni as your heart desires. I cover the entire top of the pizza potato casserole with pepperonis barely overlapping.
- For the shredded cheese, mozzarella is great but sometime I use a Gruyere Swiss mixture.
- I also like to stir in 1/2 pound of fried up ground pork sausage from time to time for a new spin.
- My kids do not like large chunks of tomatoes. I almost always break up diced tomatoes from a can into smaller pieces. A meat chopper is the perfect tool for this task; however, you can leave them as is, if desired.
