Ingredients

  • 24 ounces hash browns, thawed
  • 1/2 cup melted butter
  • 2 pounds cooked sausage, bacon or ham (or a combination)
  • 2 cups cheddar cheese, shredded
  • 8 eggs
  • 1 cup milk
  • 1/2 teaspoon seasoned salt

Instructions

  • Preheat oven to 425 degrees F. Spray a 9x13 inch pan generously with nonstick cooking spray.
  • Pour the hash browns into prepared dish. Drizzle with melted butter. Bake for 25 minutes.
  • Remove pan from oven and turn down heat to 350 degrees F.
  • Sprinkle breakfast meats and cheese over hash browns.
  • Whisk together eggs, milk and seasoned salt. Pour over casserole.
  • Bake for an additional 35 to 45 minutes or until golden brown and set.

Notes

  • This breakfast casserole with hash browns serves a crowd. It makes a full 9x13 inch pan.
  • Customize this recipe by using all one kind of breakfast meat or a combination. Cheddar cheese could be swapped out for Mozzarella or Pepper Jack too, if desired.
  • The baking process for tailgate breakfast casserole is a 2 step process. Bake the hash browns at 425 degrees F, and then turn down the heat to 350 degrees after the rest of the ingredients are added.
