Ingredients

  • 3 cups powdered sugar
  • 3/4 cup cocoa
  • 5 ounces chopped chocolate or chocolate chips
  • 1 1/2 cups toasted nuts (such as walnuts), optional
  • 4 egg whites

  • Preheat oven to 325 degrees F.
  • Add sugar and cocoa to mixing bowl, whisking well to combine.

Notes

  • Chocolate Chewies have no flour, making it a gluten-free dessert.
  • Semi-sweet chocolate chips work great, but I also sometimes cut up dark chocolate or semi sweet chocolate bars into slivers or chunks.  It's a great way to use up any leftover baking chocolate you might have on hand.
  • Nuts are optional.  Toasting the nuts could also be omitted; however, it is worth the extra effort. 
  • If you love a fudgy chocolate chewy cookie, then go ahead and under bake.  Just note, they do not come off the pan easily and also tend to fall apart.  But they are decadently fudgy!
  • Line your pan with parchment before baking.  This will prevent the cookies from getting stuck to the pan.
