Ingredients

  • 1 1/2 cups brown sugar
  • 2/3 cups vegetable oil
  • 1 egg
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced rhubarb
  • 1/2 cups chopped nuts

Crumble Topping

  • 1 Tablespoon softened butter
  • 1/2 cup brown sugar

Instructions

  • Preheat oven to 325 degrees F. Grease and flour 2 loaf pans.
  • Whisk together brown sugar, vegetable oil and egg until incorporated.

  • Stir in rhubarb and nuts.

  • Pour evenly between the two prepared loaf pans.

Notes

  • If needed, substitute canola oil for vegetable oil. 
  • I recommend chopped walnuts or pecans for the nuts; however, the nuts can be omitted completely.
  • Omit the crumble topping, if desired.  It's adds a great layer of flavor, so I recommend keeping it!
