- 14.75 oz. can cream style sweet corn
- 15 oz. can whole kernel sweet corn, drained
- 14.5 oz. can diced tomatoes with basil, garlic & oregano
- 15 oz. can great northern beans, drained
- 12 oz. can evaporated milk
- 8 oz. can tomato sauce
- 1 cup potatoes diced or shredded
- 2 chicken breasts diced
- 1 cup half and half
- Salt and pepper to taste
Combine cream corn, sweet corn, diced tomatoes, beans, evaporated milk, tomato sauce, chicken and potatoes in slow cooker.
Cover and cook on low for 8 hours or until chicken is tender.
Add half and half and salt and pepper to taste.
Cook for an additional 30 minutes or until warmed through.
Garnish with shredded cheddar cheese and crackers.
- Drain canned, regular corn and beans before adding to the slow cooker .
- This is such an easy slow cooker chowder recipe. Open the cans, and toss them in. Fix it and forget it.
- Do not put the half and half in until the end of the recipe, about thirty minutes before serving. You don't want it to curdle.
- To lighten things up, use fat free evaporated milk.
- If you're lazy, put whole chicken breasts in this crock pot chowder, and shred them before putting in the half and half.
- Use a bag of frozen hash browns or diced potatoes instead of fresh potatoes, if desired.
- Regular canned diced tomatoes can be used or try changing out your favorite canned beans.
