- 15.25 ounces dry chocolate cake mix
- 8 ounces cream cheese, softened
- 1/2 cup margarine, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
- 1/2 cup powdered sugar
Preheat oven to 350 degrees F.
Cream softened cream cheese and softened margarine.
Add egg and vanilla extract, and mix until creamy.
Mix in dry chocolate cake mix. Stir in mini chocolate chips.
Place powdered sugar in a bowl. Scoop cookie dough with a small cookie scoop directly into powdered sugar. Roll to coat.
Place on a cookie sheet.
Bake for 14 to 15 minutes or until puffed up. Let cool on pan for a few minutes.
Remove to cooling rack to finish cooling.
- Be sure cream cheese and margarine are softened before creaming.
- Substitute butter for margarine, if desired.
- To lower the fat, use softened Neufchâtel cheese instead of cream cheese.
- If needed, use regular chocolate chips for mini chocolate chips.
- The dough for these cream cheese cake mix cookies is very sticky. I recommend using a small cookie scoop, dropping them directly into a bowl of powdered sugar. The powdered sugar will coat the cookies making them less sticky. Then, you can finish rolling into a ball by hand, if desired.
