- 2 1/2 pound chuck roast
- 1 onion, diced
- 1/2 cup celery, diced
- 4 tablespoons lemon juice or vinegar (or a combo)
- 1 cup ketchup
- 3 Tablespoons Worcestershire sauce
- 2 Tablespoons brown sugar
- 2 Tablespoons mustard
- 2 teaspoons chili powder
- 1 cup water
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Spray a slow cooker insert with nonstick cooking spray. Place chuck roast in crock pot insert.
Combine all remaining ingredients in a bowl, pour over chuck roast.
Cover and cook on high for 4 hours or low for 7 - 9 hours or until meat pulls apart easily.
Pull meat, return to BBQ sauce.
Serve on sandwiches, potatoes, rice or noodles.
- I prefer a chuck roast but an arm roast or rump roast works too.
- If your beef roasts are frozen, thaw first before putting in the crock pot.
- Lemon juice or white vinegar work for this pulled beef sandwich recipe, or use a combination of both.
- Celery could technically be omitted, if needed or desired.
- Dried onion works in place of fresh, diced onion.
- On a low sodium diet? Omit salt completely since ketchup has salt in it too.
