Beef Chunks in Sour Cream - A Slow Cooked Cubed Beef Recipe

Ingredients
3 - 5Tablespoonsvegetable oil
2 -3poundsbeef stew meat
1cupflour
2smallonions, sliced thin
1 1/2cupssour cream
1cupmushrooms, sliced
1/2teaspoondried oregano
1/4teaspoondried basil
1teaspoonsalt
1 1/2teaspoonspaprika
Instructions
In a large saucepan or Dutch oven, heat 3 tablespoons vegetable oil.
Roll beef cubes in flour,
Brown floured beef in batches in oil. Add more oil between batches if needed.
Remove all browned beef to a plate. Brown onions in same pan, adding more oil, if needed.
To the onions, add browned beef, sour cream, mushrooms, oregano, basil, salt and paprika and stir.
Cover and simmer on low heat, stirring occasionally. Cook approximately 1 hour and 45 minutes or until gravy forms and meat is tender.
Serve over mashed potatoes, rice or buttered noodles.
Notes
Try browning the cubed beef in batches to ensure they get a nice brown color. If you overcrowd the pan, the beef doesn't brown as well. Just remove the beef to a plate once browned, and add a new batch. You may need to add more oil to the pan too.
If you have either dried oregano or dried basil, but not both, just double the amount of the one you have.
Cover the pan, and cook on low, letting it simmer slowly. Stir occasionally.
When you first add the sour cream and other ingredients to the beef, it will be very thick. It will form it's own gravy as it cooks.
Serve over mashed potatoes, rice or buttered noodles.
This recipe can be made in the Crock Pot too. After browning the cubed beef and mushrooms, add all ingredients to the slow cooker insert, cover and cook on low.
