My kids absolutely go wild for Mexican Lasagna. A mixture of ground beef, corn and salsa is layered between corn tortillas and cottage cheese making for an easy casserole that feeds a crowd.

Ingredients

  • 1 pound ground beef
  • 3/4 cup diced onion
  • 3/4 cup chopped green pepper
  • 24 ounces jarred salsa
  • 15.25 ounces canned corn, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 10 corn tortillas 6-inch size
  • 2 cups cottage cheese
  • 1-2 cups shredded cheddar cheese

Instructions

  • Brown ground beef, onion and green pepper; drain excess grease if needed.

  • Stir in salsa, drained corn, cumin and chili powder.

  • In a 13 x 9 inch baking dish that has sprayed with nonstick cooking spray, spread 1/2 of the ground beef mixture.

  • Top with half of the corn tortillas, cutting the 5th one in half to cover the end. Spread 1 cup cottage cheese over the tortillas.

  • For the next layer, add the remaining 5 corn tortillas; spread with the remaining 1 cup cottage cheese. Top with the remaining 1/2 of ground beef mixture. Sprinkle with shredded cheddar cheese. (see notes if you get confused on the layers)

  • Bake for 30 minutes in a preheated 375 degree F oven. Let rest for 10 minutes before cutting.

Notes

  • This is a Mexican Lasagna casserole with corn tortillas.  If you prefer, use flour tortillas.
  • Change up the shredded cheese to Colby, Pepper Jack or whatever you prefer.
  • Want to make it a little healthier?  Use ground turkey and fat free cottage cheese.
  • For a spicy taco lasagna, use salsa that is medium in heat.
  • Top with sliced olives or jalapenos if desired. 
  • To prevent the taco lasagna casserole from falling apart when cutting, let rest 10 minutes once removed from the oven.
