Hamburger Hot Dish with Rice
Got picky kids? I've got a new meal just for you. Hamburger Hot Dish with Rice is an easy casserole that my kids love, and yours will too. Featuring ground beef, rice, and kidney beans in a base of tomato sauce, you may already have all the ingredients on hand.

- 1 cup raw rice (not instant)
- 1 1/2 pounds ground beef
- 1 onion, diced
- 1 cup celery, diced
- 1 teaspoon salt
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
- 15 ounces red kidney bean, drained
- 1 quart tomato juice (4 cups)
Preheat oven to 350 degrees F; spray a 13 x 9 inch baking dish with nonstick cooking spray.
Boil rice in salted water until partially cooked (approximately 5 minutes); drain and set aside.
In a large skillet, brown ground beef with onions and celery; drain excess grease if needed.
Season beef with salt, black pepper, seasoned salt and chili powder. Add drained beans to the mixture and stir.
Alternate rice and meat mixture in the prepared baking dish. Pour tomato juice over the casserole.
Bake uncovered for 1 hour or until rice is cooked and fluffy.
Fluff casserole with a fork before serving.
- On a budget? Reduce the ground beef to 1 pound instead of 1 1/2 pounds in this hamburger casserole.
- If your ground beef is greasy; drain the excess grease before seasoning.
- Swap out tomato juice for V8 juice, if desired.
- Dark red or light red kidney beans can be sure. Be sure to drain them.
