Easy Sausage Pancake Casserole

Tired of sitting over a skillet, flipping pancakes one at a time?  Easy Pancake Sausage Casserole (aka pancake mix casserole) uses five simple ingredients and will transform the way you prepare pancakes for your family.

Ingredients

  • 1 cup pancake mix
  • 1 egg, beaten
  • 1 cup milk
  • 2 Tablespoons butter, melted
  • 1 cup cooked breakfast sausage, sliced or diced

Instructions

  • Preheat oven to 450 degrees F.
  • Spray an 8 x 8 inch baking dish with non-stick cooking spray.
  • In a mixing bowl, beat pancake mix, eggs, and milk until smooth. Add butter and mix until completely blended.
  • Pour into prepared baking dish; arrange cooked sausage over top.
  • Bake for 20 minutes or until golden brown.
  • Cut into slices, and serve topped with maple syrup.

Notes

  • Use your favorite boxed pancake mix for baked pancakes.
  • Try doubling or tripling this recipe for a bigger family. (Our family of 5 ate the whole pan easily.)
  • Beat pancake mix, milk and egg together first, and then add the melted butter.  This prevents the hot butter from curdling the eggs. 
  • We used precooked sausage patties. They were frozen so we nuked them in the microwave and cut each patty into 1/4 pieces.  You could also use cooked sausage links that you slice or crumbled pork sausage. As long as it's sausage and it's cooked (not frozen), then you are good to go.
  • Or, try swapping sausage for cooked, crumbled bacon in this breakfast pancake bake. 
  • Serve topped with maple syrup.  Do yourself a favor and use the real deal.  There's no comparison.
