Chocolate Chip Molasses Bars are an old-fashioned molasses cookie with a dense texture. They have that traditional molasses cookie flavor enhanced with the addition of chocolate chips. Making these as a bar cookie cuts down time and energy.

- 1/2 cup butter
- 1/4 cup molasses
- 3/4 cup brown sugar, firmly packed
- 1 egg
- 1 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup chocolate chips
Preheat oven to 350 degrees F. Grease a 13 x 9 x 2 inch pan or line it with parchment paper.
In a small saucepan; heat butter, molasses and brown sugar over low heat until the sugar is melted. Set aside to cool.
Beat egg until light and airy; add to cooled molasses mixture
Sift flour, salt and baking soda. Add chocolate chip pieces and mix.
Add flour mixture to the cooled molasses mixture and mix well. Pour into prepared pan.
Bake for 20 minutes in preheated oven. Set on cooling rack and cool in pan.
If desired, cut off edges. Cut into bars.
- To make your life easy, stock up on parchment paper. Do you have to grease parchment paper after lining a pan? The answer is no. Line it with one piece that's longer than the pan, or line it in both directions to make it super easy.
- Margarine can be substituted for butter if desired in these soft molasses cookies.
- Be sure to let the molasses mixture cool completely before adding in the other ingredients. You do not want the chocolate chips to melt into the mixture.
