Easy Apple Crisp for One

We've taken our Grandma's Famous Apple Crisp and portioned it perfectly for one.  This Easy Apple Crisp for One takes the guilt and temptation out of eating more than you should.

Ingredients

  • 1 large apple, peeled and sliced (approximately 1 cup)
  • 2 Tablespoons instant oats
  • 2 Tablespoons brown sugar
  • dash salt
  • 1 Tablespoon flour
  • 1/8 teaspoon ground cinnamon
  • 2 Tablespoons melted butter

Instructions

  • Preheat oven to 350 degrees F. Spray a small baking dish (22 ounce Corning Ware or small ramekin).
  • Peel and slice apple; arrange in bottom of prepared dish.
  • Mix oats, brown sugar, flour, salt and cinnamon; add melted butter and mix.
  • Spread crumbly mixture over apples.
  • Bake for approximately 35 minutes or until tender and bubbly.
  • Serve with ice cream or whipped cream if desired.

Notes

  • Why would you need a single serving?  You may be on a diet, and this is good portion control. Or, if you are a family or one or two, then a normal sized apple crisp is just too big.
  • Approximately 1 cup of sliced apples is the perfect amount. This tends to be one large or 2 medium sized apples.
  • In all reality, this could be a recipe for two.  It just depends on how big of a serving size you are searching for.
  • This mini apple dessert is inspired by Grandma's Easy Apple Crisp recipe.  It's one our all time favorites.  So if you are wanting to go big, try this one.
  • If you want more cinnamon flavor, you can add 1/4 teaspoon.  Another option would be to sprinkle the apples with the cinnamon instead of putting it in the topping.  Either way, this individual apple dessert is divine.
  • You would think that the cooking time would be much less than a normal size pan, but it actually turns out to be the same to get the apples to the correct tenderness.
  • Do you have vintage Corning Ware?  If so, you may have one of those adorable little baking dishes in your cabinet.  The 22 ounce size is perfect to make a mini version of your favorite fruit crisp.
