  • 1/3 cup margarine
  • 1 cup sugar
  • 1 egg
  • 1 cup flour, unsifted
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla
  • 2 cups apple, peeled and grated
  • 1/2 cups chopped nuts
  1. Preheat oven to 350 degrees F.

  2. Cream together margarine, sugar and egg.

  3. Gradually add dry ingredients - flour, baking soda, salt, cinnamon and nutmeg - to wet ingredients. Mix until incorporated.

  4. Stir in vanilla, grated apples and chopped nuts.

  5. Pour into an ungreased 8x8 inch baking dish.

  6. Bake for 35 minutes or until a toothpick comes out clean.

  7. Serve hot or cold!
