Ingredients
  • 1 pound fresh or frozen thin (French Style) green beans
  • 2 tomatoes, cut in wedges
  • 1 small onion, sliced thin
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • 2 Tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon prepared yellow mustard
  • dash black pepper
Instructions
  1. Bring a medium saucepan of salted water to boil. (1/2 teaspoon salt for every cup water).

  2. Add green beans and cook until tender but not completely soft, approximately 5 minutes.

  3. Prepare vinaigrette by mixing together oil, red wine vinegar, garlic, salt, mustard and pepper.

  4. Add cooked beans directly to dressing while still warm. Toss to coat.

  5. Cover and refrigerate for a minimum of 45 minutes.

  6. Just before serving, gently mix in tomato wedges and onion slices. Sprinkle with Parmesan cheese.
