- 1/2 cup unsalted butter, softened
- 2 ounces almond paste
- 1/2 cup sugar
- 1 egg
- 3/4 teaspoon almond extract
- 1 3/4 cups flour
- 1/4 teaspoon salt
Preheat oven to 350 degrees F.
Cream softened butter and almond paste on the lowest speed.
Add sugar, and cream on medium speed.
Add egg and almond extract, and continue to cream.
In a separate bowl, mix flour and salt. Add flour mixture to the creamed mixture.
Pour onto a lightly floured surface, and knead gently with your hands.
Roll into 1 to 2 inch balls (1 inch for thin, crispy cookie, 2 inch for thick, soft cookies). Press evenly with cookie stamp.
Optional: take a round cookie/biscuit cutter and remove the rugged edges.
Bake for 10 - 14 minutes on the rack placed in top 1/3 of oven. Start checking at 10 minute mark. Remove when lightly golden brown.
Let cool for a few minutes on the baking sheet. Remove to wire racks to continue to cool.

- Start with unsalted butter, if possible. Salted butter will work in a bind. Just be sure it's softened.

- If you do not have a hand mixer or stand mixer, you can make these by hand. Just be patient, and give yourself enough time to cream the almond paste and butter together completely.

- There's no need for a rolling pin. Just lightly knead with your hands.

- If desired, line your cookie sheet with parchment paper.

- Try to press evenly on the stamp so that the shortbread cookies are evenly sized. If not, one side will get browner than the other in the oven.

- If the stamp doesn't come out right, just start over by rolling into a new ball of cookie dough.
