Ingredients

  • 2 cups raw, long grain white rice
  • 1 1/2 cups celery, sliced thin
  • 3/4 cups onion, sliced thin
  • 1 large bunch scallions, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 Tablespoons fresh mint, chopped

Dressing

  • 1 Tablespoon white wine vinegar
  • 2 Tablespoons lemon juice
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 3/4 cup olive oil
  • salt and black pepper, to taste
